No that is not what they said.

They wanted to make everyone submit to the will of Allah or be enslaved.

Muslim meaning one who has submitted.

Well yes and no. They often hid their real motives. The forbidden "Milestones" of Sayyid Qutub explores this very question at length. He raged against those who said the Muslims conquered for wealth. It takes away all dignity and holiness from Islam. I can't remember if he addressed the now popular "defending themselves", idea. He championed what you said, Conquest in defense of the Truth, that man has the right to live under true Law. Whether he chooses to convert is his own choice. But he has an absolute right to live under God's law. If he wants to worship in a religion of an earlier revelation is up to him.
