JHK talks with Erik Andrus of the Vermont Sail Freight Project. They are building a boat dedicated to shipping Vermont farm products to New York City and other markets via Lake Champlain, the Champlain Canal, and the Hudson River. Erik operates the 110 acre Boundbrook Farm as well as Good Companion Bakery in Vergennes Vermont.

Interesting observation, about people missing from period pictures. Allow me some suppositions. North American agriculture could afford being expansive (less people for more terrain, so less people in pictures?). This made a big difference and an unprecedented concurrence to the European agriculture (I found it in a Zola novel as explanation of how end 19th century European agriculture suffered while America thrived). Your observation about people missing from that period pictures in America might be linked also to the fact that agricultural machines were overall more accesible to land owners, which made people less important and agriculture looking more like a business than a (people’s) subsistence tool. I also suppose that puritans are less into antropomorphic parasites, but you should know better about that :)).
